Grilled Greek Lemon Chicken Ingredients
I Love marinating my Grilled Greek chicken before I make it. I find the marinated version more tasty and flavorful.
For my marinade I use:
- Olive oil
- Lemon zest and juice
- Oregano, thyme, rosemary
- Salt and pepper
- Chicken breasts
- Fresh parsley (I use this for garnishing)
How to get the Best Lemon Chicken
While marinating, mix the marinade and ensure you flip the bag of marinating chicken over halfway through to redistribute the marinade.
Pound the chicken breast using a mallet (or a rolling pin) to make it thinner to make it cook quicker and more evenly
Let the grilled chicken breast rest for 5 minutes before serving/cutting so that the juices can redistribute evenly within the chicken.
NB: Don’t marinate the chicken for more than 5 hours. Marinating it for too long can toughen it up and make it chewy. I do not recommend marinating the chicken breast overnight.
How to Grill Chicken
Mix the marinade and pour it onto the chicken breast in a large zipper bag.
Let the chicken marinate in the fridge for 2 to 5 hours.
Grill chicken (ensure the grill is preheated grill for about 2-3 minutes) cook through (about 4 minutes on either side).
